Meet
Tasia Malakasis, 41, owner of the
Fromagerie Belle Chèvre in Elkmont,
Alabama, a creamery known for its hand-
crafted, French-style goat cheese
(chèvre
means “goat” in French).
Her start
“I tasted Belle Chèvre cheese
at a gourmet store in New York City, and
was blown away—then I discovered it
was made 15 miles from my Alabama
hometown. I was ready for a change, so
I headed home to make cheese with my
then 3-year old son, Kelly, alongside. I
learned the trade the old-fashioned way,
as an apprentice for six months. I loved it,
and in 2006 I bought the creamery.”
Her vision
“Goat cheese shouldn’t be
considered special-occasion-only food, so
we’ve created breakfast cheeses, come up
with playful names, and sell crumbles that
we refer to as ‘confetti.’ I’m proud that it’s
now sold in gourmet grocery stores
and
my
local Piggly Wiggly.”
You are what you eat?
“Chèvre only
takes about 18 hours per batch, so it’s
easy to create something totally off the
cuff with it—it’s versatile, it’s playful,
it’s
me\
I steer clear of aged, delicate,
‘serious’ cheeses that need coddling and
special conditions; they just don’t fit with
who I am.”
Her style
“I dress simply, with one unex-
pected touch. I never want it to seem like
I’m trying too hard. Achieving something
simple and unfussy is often the hardest
thing to accomplish, both in clothing and
in food.”
